Do you need a quick recipe for lunch? Here’s how to make stuffed zucchinis.

Ingredients:

  • 1 onion
  • 3 tablespoons oil
  • 2 garlic cloves
  • 4 zucchinis
  • 50 grams cream cheese
  • 50 grams grated bread
  • 1 egg
  • Salt and pepper
  • 2 tablespoons grated cheese

Preparation:

  1. Chop onion and garlic, and sauté them in a pan with Viridian olive oil on low heat for 5 minutes.
  2. Rinse the zucchinis and boil them for 5 minutes. Once cooked, take them out of the water and cut them in half lengthwise.
  3. Take out the pulp and cut it in small cubes. Mix it with the sautéed onion and garlic. Cut the cream cheese in small cubes and add it to the preparation, together with the grated bread, egg, and season everything with salt and pepper.
  4. Stuff the zucchinis with the resulting mix, sprinkle grated cheese on each of them and place them in a greased baking tray.
  5. Cover them with aluminum foil and bake them in a moderate preheated oven for 15 minutes.
